Shiro miso is also known as sweet white miso. It is made from fermented rice and whole soybeans. It is sometimes referred to as a young miso due to its relatively short fermentation period. Lighter in colour, flavour, and texture than other misos. It is also considered the sweetest and lowest in salt content compared with other misos. Ideal for salad dressings, sauces, vegetable dishes, noodles, and marinades.

Recommended Usage: Bring two cups of water with dashi seasoning to a boil. Add your choice of vegetables, tofu, and cut wakame and simmer for a few minutes. Then immediately turn off the heat to whisk in 4 teaspoons of shiro miso paste. Do not boil the miso paste as it will cause the miso soup to become gritty and destroy the probiotics found in miso.
