Mixed lentils have good nutritional value with dietary fiber, B-vitamins, protein, and hardly any calories. The mixed lentils are hulled and split. It cooks faster than dried beans and do not need to soak before cooking. Its soft texture makes it suitable to thicken soups and to make purees.
Lay lentils out on a white kitchen towel or on a light colored work surface. Discard any dirt, tiny stones, and damaged lentils. Rinse thoroughly under cold water and place them in a strainer. Mixed lentils do not require any soaking before cooking and they are ready to be cooked after rinsing.
