The Adzuki Bean is a rich vegan source of iron and protein with low fat and natural sweetness. They are a good source of magnesium, potassium, iron, zinc copper, manganese and vitamin B3.
For use in soups, casseroles, or desserts. In the Orient, adzuki beans are usually cooked to a red soft consistency and can be served with such ingredients as coconut milk. They may also be cooked with rice. In the East, it’s also common to find adzuki beans sweetened with sugar and made into cakes or other types of desserts.
